Maple Sweet Potato & Chorizo Hash

Ingredients
2 small sweet potatoes, cleaned & cubed
2 small russet potatoes, cleaned & cubed
1 onion, sliced
3 tbsp maple syrup
3 tbsp olive oil
2-3 links smoked chorizo sausage, sliced
1 1/2 cups sauerkraut
4 eggs
Salt & pepper, to taste
Directions
Preheat oven to 400 degrees.
Toss potatoes with olive oil, maple syrup, & salt. Place on parchment lined baking sheet in oven for about 15 minutes, until golden brown.
In large oven safe skillet, saute onion in olive oil for 5 minutes, until caramelized. Add sausage and saute for another 5-8 minutes .
When potatoes are done, add to skillet with onion and sausage. Mix in 1 cup of sauerkraut. Crack eggs into the skillet then place in middle of the oven with the broiler on for about 5 minutes, until eggs are cooked.
Remove from oven, top with remaining sauerkraut, and enjoy!
