Eggnog Cookies

Ingredients
1 cup (2 sticks) butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 cup eggnog
1 tsp pure vanilla extract
4 cups all-purpose flour
2 1/4 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp salt
Dash of nutmeg
Eggnog Icing:
2 1/2 cups powdered sugar
4 tbsp unsalted butter
3 tbsp eggnog
grated nutmeg (optional)
Directions
In a large bowl, beat together butter and sugar until light and fluffy.
Add eggs, one at a time, mixing well after each addition.
Add eggnog and vanilla.
In a separate bowl, combine baking powder, flour, nutmeg, and salt. Add to butter mixture, beating until combined.
Chill dough for easier handling and pre-heat oven to 350 degrees.
Roll out dough on lightly floured surface to 1/4 inch thickness.
Cut our cookies and place on parchment lined cookie sheets.
Bake 10 minutes or until edges are golden brown. Remove from pan and allow to cool completely.
Meanwhile, combine powdered sugar and butter in a small bowl, blending with a fork.
If icing is stiff, add extra eggnog one tablespoon at a time until creamy and smooth.
When cool, ice cookies with eggnog icing and sprinkle tops with a dash of nutmeg. Enjoy!
